Chuko Shuzo is making Awamori in their method passed down from old times. They are famous for Awamori made from Mango yeast and the fact that they make pots by themselves to fermentation.
Awamori Brewing Workshop
Up to 3 people at a time, 2 hours of workshop is possible. The steps you do by yourself is washing rice, steaming, and adding black mold. 3 months later, your original Awamori with your own label will be delivered at your house.
Blending Technique
"Shitsugi" is the method for awamori making adding new product to old one to grow more old awamori. This deepens the taste ow awamori. "Chuko Premium" is a solution of high quality blend technique with sweet honey taste and floral scent.

Pots Sounds Like an Iron Bell
They also choose pot material soil carefully. They make pots material by mixing ja-garu soil from southern part of main Okinawa island and Ryukyu red soil from northern part. This process can also be seen in the factory tour.
